Gluten is a family of storage proteins that are naturally found in certain cereal grains such as wheat, barley, and rye. When heated gluten can stretch and trap gas. This allows for certain foods to rise and maintain moisture like bread, pasta and other similar items. Gluten improves texture and promotes moisture retention.
It’s also important to remember that some people cannot eat gluten. For example celiac disease is the most severe form of gluten intolerance. If you are one of these people that’s okay because there are many gluten-free diets available!

- Processed grain-based products
- Soy sauce
- Flavored chips
- Beer and certain kinds of wine
